Shrimp Cocktail on Steroids

I would love to take the credit for this amazing recipe, but this is my husband, Steve’s little recipe he came up with. (like I’ve said before, he thinks he’s Gordon Ramsey LOL).

Shrimp Cocktail on Steroids can be served in a couple of ways: 1). as an amazing starter to a traditional Steak and Mash Potatoes main 2). Like I have prepared today, a lunchtime main course for 1 to 2 people. They both work extremely well, but I think I prefer this as a light main course, giving me more room for dessert LOL!

Food blog Shrimp

Ingredients

  • Sea Salt
  • Black Pepper
  • Cayenne Pepper
  • Paprika
  • 1 Jalapeno Pepper
  • 1 Mini Red Pepper
  • 1 Medium Lemon
  • 1 Lime
  • Lettuce
  • ½ lb Raw Shrimps
  • Marmalade
  • Cilantro
  • Cucumber
  • Olive Oil

Directions

  • Start by chopping and dicing half of each pepper (Jalapeno and Red).
  • De-tail and wash all Shrimps.
  • Squeeze both the Lemon and Lime into a small pan.
  • Sprinkle a little salt, pepper, ½ tablespoon Cayenne Pepper, Paprika and add a tablespoon of Marmalade then stir all ingredients together with a tablespoon of olive oil.
  • Cover pan and leave in refrigerator for 1hr.
  • After 1hr place pan on a medium heat and bring to a very light boil.
  • Wait for each Shrimp to turn pink then turn off heat and let stand for 3 mins.
  • Chop 2 inches of cucumber.
  • Remove 3 lettuce leaves and place on plate, with 2 slices of whole wheat bread.
  • Place each Shrimp on leaves and pour lemon and lime sauce over both shrimps and lettuce (as much as you want).
  • Sprinkle cucumber and Cilantro.
  • Enjoy!
